special shrimp balls

Every time this is made I think of a dear friend who loved shrimp. While she had a shrimp mold she always had at parties, she asked for this recipe to make and serve too! I took that as a high compliment! When I try some of this and some of that, I never know if it's a winner until people want the recipe! She thought so and I hope you will also.

Ingredients

  • 1 pound cold steamed shrimp
  • 1 tablespoon jarred chili sauce
  • 1 - hard-boiled egg, mashed
  • 3-4 tablespoons cream cheese, room temperature
  • 2 teaspoons horseradish
  • 1/4 cup celery, minced
  • 1 tablespoon white onion, minced
  • - salt and peper to taste
  • 1/8 teaspoon old bay seasoning
  • - fresh parsley, finely chopped

How To Make special shrimp balls

  • Step 1
    Prepare these appetizers 1 day ahead so the flavors will be enhanced.
  • Step 2
    Finely chop steamed chilled shrimp. Put in a bowl.
  • Step 3
    In a small bowl, add all remaining ingredients EXCEPT the parsley. Blend well.
  • Step 4
    Add cream cheese mixture to shrimp. Stir to be sure all is incorporated.
  • Step 5
    Form into small bite size balls and roll in the fresh parsley.
  • Step 6
    Place on a cookie sheet lined with waxed paper. Cover and chill in the refrigerator overnight until ready to serve.
  • Step 7
    Arrange on a serving plate or platter with an assortment of crackers. Have toothpicks nearby.
