smoked salmon delights

These are a really easy and delicious appetizer for anytime of the year! I'll post a pic next time I make them. Enjoy!

Ingredients

  • 1 - french baguette
  • 1 small red onion
  • 2-3 tablespoons sugar
  • 2-3 tablespoons balsamic vinegar
  • 1 small container of marscapone cheese
  • 1 package smoked salmon
  • 1 small jar of capers
  • - fresh chives diced for garnish
  • 1/2 - fresh lemon

How To Make smoked salmon delights

  • Step 1
    Slice Bread into 1/2" slices, brush with olive oil and toast until lightly brown, let cool.
  • Step 2
    Heat a non-stick pan and thinly slice red onion, add the 2 tbls. of sugar and cook on very low until they are soft and carmelized, add balsamic vinegar at end and set aside.
  • Step 3
    For each slice of toasted bread spread spread a thin layer of marscapone cheese, carmelized onions and salmon. Garnish with capers and diced chives. Then give a squeeze of lemon over them. Enjoy!
