    6 plum tomatoes, seeded and diced
  • ·
    1/2 cup diced yellow onion
  • ·
    1 jalapeno chile, seeded and diced
  • ·
    2 cloves garlic, minced
  • ·
    2 t. minced fresh parsley
  • ·
    1 t. minced fresh cilantro
  • ·
    1 t. crushed dried oregano
  • ·
    2 t. olive oil
  • ·
    1 t. red wine vinegar
  • ·
    1/4 t. salt
  • ·
    1/8 t. ground black pepper
  • ·
    2 dozen cooked shrimp

How to Make Shrimp with Fresh Tomato Salsa


  1. In medium bowl, mix together all of the ingredients except for the shrimp; toss well. Cover and refrigerate for 8 to 10 hours to allow flavors to blend and fully develop. Serve with the shrimp. To simplify, buy a good quality ready made salsa at the grocery store or Mexican take out restaurant. Wear rubber gloves when seeding the chile. Makes 3 1/2 cups
