6 plum tomatoes, seeded and diced
1/2 cup diced yellow onion
1 jalapeno chile, seeded and diced
2 cloves garlic, minced
2 t. minced fresh parsley
1 t. minced fresh cilantro
1 t. crushed dried oregano
2 t. olive oil
1 t. red wine vinegar
1/4 t. salt
1/8 t. ground black pepper
2 dozen cooked shrimp

1In medium bowl, mix together all of the ingredients except for the shrimp; toss well. Cover and refrigerate for 8 to 10 hours to allow flavors to blend and fully develop. Serve with the shrimp. To simplify, buy a good quality ready made salsa at the grocery store or Mexican take out restaurant. Wear rubber gloves when seeding the chile. Makes 3 1/2 cups
