Ingredients

  • - 6 plum tomatoes, seeded and diced
  • - 1/2 cup diced yellow onion
  • - 1 jalapeno chile, seeded and diced
  • - 2 cloves garlic, minced
  • - 2 t. minced fresh parsley
  • - 1 t. minced fresh cilantro
  • - 1 t. crushed dried oregano
  • - 2 t. olive oil
  • - 1 t. red wine vinegar
  • - 1/4 t. salt
  • - 1/8 t. ground black pepper
  • - 2 dozen cooked shrimp

How To Make shrimp with fresh tomato salsa

  • Step 1
    In medium bowl, mix together all of the ingredients except for the shrimp; toss well. Cover and refrigerate for 8 to 10 hours to allow flavors to blend and fully develop. Serve with the shrimp. To simplify, buy a good quality ready made salsa at the grocery store or Mexican take out restaurant. Wear rubber gloves when seeding the chile. Makes 3 1/2 cups
