This is a yummy summer appetizer or main course. Sometimes the heat says, "Just fix that shrimp cocktail". Enjoy

  • 10
    16-21 count cooked shrimp
  • 1/4 small
    red onion
  • 1/4 c
    cucumber, chopped fine
  • 1/4 c
    grape tomatoes, cut in half
  • 1/4 c
    sweet red pepper
  • 1/4 c
    green pepper
  • 1 Tbsp
    fresh dill
  • 1 c
    tomato juice
  • 1/2 Tbsp
    chopped cilantro
  • 1 Tbsp
    seasoned rice wine vinegar
  • 5 dash(es)
    yuzu juice
  • ·
    salt and fresh ground pepper to taste

How to Make Shrimp & Mango Cocktail


  1. Chop your vegetables and season with rice wine vinegar, yuzu juice, dill, cilantro, salt and pepper. Refrigerate for an hour to chill.
  2. Put chopped vegetables in two decorative glasses, pour half of the tomato juice over each one.
  3. Hang shrimp over side of glass, garnish with dill, cilantro and a lemon wedge. Serve cold.
