Ingredients

  • 10 - 16-21 count cooked shrimp
  • 1/4 small red onion
  • 1/4 cup cucumber, chopped fine
  • 1/4 cup grape tomatoes, cut in half
  • 1/4 cup sweet red pepper
  • 1/4 cup green pepper
  • 1 tablespoon fresh dill
  • 1 cup tomato juice
  • 1/2 tablespoon chopped cilantro
  • 1 tablespoon seasoned rice wine vinegar
  • 5 dashes yuzu juice
  • - salt and fresh ground pepper to taste

How To Make shrimp & mango cocktail

  • Step 1
    Chop your vegetables and season with rice wine vinegar, yuzu juice, dill, cilantro, salt and pepper. Refrigerate for an hour to chill.
  • Step 2
    Put chopped vegetables in two decorative glasses, pour half of the tomato juice over each one.
  • Step 3
    Hang shrimp over side of glass, garnish with dill, cilantro and a lemon wedge. Serve cold.
