This is a great dip served hot or cold! It taste like you slaved over the stove for hours to make, but it is very simple and easy. You can substitute the shrimp for crawfish, crabmeat or oysters!

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 tablespoons chopped green onions
  • 1/4 cup white wine
  • 1 cup milk
  • 1 tablespoon tomato paste
  • - salt to taste
  • - white pepper to taste
  • - cayenne pepper to taste
  • 2 teaspoons chopped garlic
  • 1 1/2 pounds small, peeled shrimp

How To Make shrimp cardinal

  • Step 1
    In a large skillet, blend together the butter and the flour, stirring for about 2 minutes.
  • Step 2
    Then add the green onions,garlic, wine, and milk. Bring to a simmer. Stir in the tomato paste and season to taste with salt and two peppers.
  • Step 3
    Add the shrimp and simmer for 10 minutes
  • Step 4
    When it is done cooking, serve the dip in a bowl with a plate of crackers or french bread croutons.
