Ingredients
- 2 - 3 Roma tomatoes (about 1/2 cup), washed, seeded and diced
- 1 tablespoon red onions, finely chopped
- 1/2 tablespoon fresh basil leaves, chopped
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1/2 tablespoon extra virgin olive oil, plus more to brush bread slices to make crostini
- 1 French baguette, sliced 1/2-inch thick
- 1/3 cup room temperature goat cheese (substitute cream cheese), or as needed
- 1/2 pound large shrimp or prawns, peeled and deveined (about 10 to 12)
- 1 tablespoon canola oil, or as needed for bbq grates
- 3 tablespoons garlic herb butter
- balzamic glaze, as needed to drizzle
How To Make shrimp bruschetta

Step 1In a small bowl, combine tomatoes, onions, basil, and freshly ground black pepper. Add oil, enough to moisten the ingredients, and stir to coat; set aside.

Step 2Make crostini and allow to cool off a little before spreading goat cheese. Spoon tomato mixture on top of prepared crostini; set aside.

Step 3Preheat BBQ between 500ºF to 550ºF and oil grates with canola oil using tongs and paper towel.

Step 4Thread shrimp on skewers, piercing them twice and leaving a little gap between each of them. Place them on hot grates and grill for 1 to 1:30 minutes per side.

Step 5After flipping, baste shrimp with Garlic Herb Butter; cook for 1 to 1:30 minutes. Flip again, and baste with the remaining butter; remove from the heat.

Step 6Allow to cool off before placing a shrimp on top of a crostini. Drizzle with balsamic glaze and serve immediately.
