Ingredients
- 6 large sea scallops, cut into quarters
- juice of 4 limes, enough to cover the scallops in a bowl
- 1 small shallot, chopped
- 2 tablespoons parsley, chopped
- 1/2 yellow bell pepper, diced small
- 5 cherry tomatoes, quartered
- 3 tablespoons olive oil
- salt and pepper
- microgreens, for garnish
How To Make sea scallop ceviche

Step 1Place the scallops in a bowl and cover with lime juice. Let sit in the fridge for at least an hour. Drain.

Step 2Mix remaining ingredients into the scallops and serve immediately, garnished with microgreens.
