Ingredients
- 1/2 cup butter
- 2 large egg yolks
- 2 teaspoons lemon juice
- 3 tablespoons fresh orange juice
- 1 teaspoon orange zest
- 12 large sea scallops
- 2 tablespoons olive oil
- 1 tablespoon butter
- salt
How To Make scallops in orange hollandaise

Step 1For the sauce. Melt the butter on stove in saucepan. Set aside and keep it warm.

Step 2Whisk the egg yolks and place in a double boiler or bowl over boiling water whisking vigorously to keep it from becoming scrambled. Once thickened remove from heat and whisk in the lemon juice then drizzle the butter in slowly whisking constantly. Whisk in the orange juice and zest. Set aside and keep warm.

Step 3Pat the scallops dry and season with salt. Place a skillet over high heat and add the olive oil and butter. Turn the heat to medium and add the scallops sear 2 to 3 minutes per side.

Step 4To plate add some hollandaise to the plate and top with scallops.
