Ingredients
- 12 large or jumbo shrimp
- 3 ounces roquefort or blue cheese
- 3 ounces cream cheese, softened
- salt to taste
- cayenne pepper to taste
- 2/3 cup fresh parsley, minced
- parsley sprigs for garnish around serving platter
How To Make roquefort stuffed shrimp

Step 1Cook shrimp (shell on) in boiling salted water (can add shrimp/crab boil to the water)

Step 2Drain shrimp and allow them to cool slightly. Peel shrimp, leaving tail on, and clean out vein. Make a pocket the length of the shrimp, but do not cut through.

Step 3Blend roquefort and cream cheese in a food processor or with a mixer. Add salt and cayenne pepper to taste.

Step 4Stuff a small amount of cheese mixture into the cavity of the shrimp - approximate 2 teaspoons.

Step 5Using the stuffed side of the shrimp, dip it into the minced parsley.

Step 6Served chilled.
