Another great hot summer recipe that stores well in the fridge. It's a bulk recipe so it is easy to keep everyone fed with those crazy summertime schedules! However, it does have mayonnaise in it, so it doesn't picnic well unless you have a good cooler. You can exchange the water chestnuts for celery, and of course the mayonnaise for fat-free.

Ingredients For quick 'n easy seafood salad

  • 1 bag
    mini shrimp (salad shrimp)
  • 1 pkg
    imitation crabmeat, flake
  • 1 can
    black olives, sliced
  • 1 can
    water chestnuts
  • 1 c
    mayonnaise
  • 1 dash
    onion powder
  • 1 dash
    parsley flakes

How To Make quick 'n easy seafood salad

    Make sure all ingredients are fully thawed and drained.

    Combine in large bowl, mixing well with hands or a mixing spoon.

    Serve with toast, over lettuce, or with crackers!
