Ingredients

  • 4 cups water
  • 3 - inch piece ginger, cut into chunks
  • 2 medium bay leaves
  • 1 tablespoon salt
  • 1 pound shrimp, shell on
  • COCKTAIL SAUCE
  • 1/2 cup ketchup
  • 2 tablespoons grated ginger
  • 2 teaspoons soy sauce
  • 2 teaspoons Chinese black vinegar

How To Make poached shrimp with ginger soy cocktail sauce

  • Step 1
    Place the water, ginger pieces, bay leaves, and salt in a large pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.
  • Step 2
    Meanwhile, mix the ketchup, ginger, soy sauce, and vinegar. Set aside. Place ice cubes in a bowl.
  • Step 3
    Add the shrimp to the simmering water and cook for about 5 minutes.
  • Step 4
    With a slotted spoon, place the shrimp on top of the ice and let them cook a bit. Serve with the cocktail sauce.
