Ingredients
- 4 cups water
- 3 - inch piece ginger, cut into chunks
- 2 medium bay leaves
- 1 tablespoon salt
- 1 pound shrimp, shell on
- COCKTAIL SAUCE
- 1/2 cup ketchup
- 2 tablespoons grated ginger
- 2 teaspoons soy sauce
- 2 teaspoons Chinese black vinegar
How To Make poached shrimp with ginger soy cocktail sauce

Step 1Place the water, ginger pieces, bay leaves, and salt in a large pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.

Step 2Meanwhile, mix the ketchup, ginger, soy sauce, and vinegar. Set aside. Place ice cubes in a bowl.

Step 3Add the shrimp to the simmering water and cook for about 5 minutes.

Step 4With a slotted spoon, place the shrimp on top of the ice and let them cook a bit. Serve with the cocktail sauce.
