Ingredients
- 1 pound salted codfish
- 1 pound potatoes
- 3 - eggs, lightly beat
- 1 small onion, yellow, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- - salt and pepper
How To Make pasteis de bacalhau (codfish fritters)

Step 1desalt the cod in water overnight, changing water atleast once.

Step 2Add enough water to pan to boil the potatoes and cod, cook until potatoes are done.

Step 3Remove skin and bones from cod.

Step 4Mash potatoes and cod in a bowl.

Step 5Add the egg, onion, garlic, parsley, salt & pepper, mix.

Step 6Form the fritter - take a soup spoon and scoop a good amount of the cod mixture and place another spoon on top to mold and place on wax paper.

Step 7Deep fry until browned and drain on paper towels.

Step 8Enjoy either hot or cold.
