This recipe is my husbands grandmother's, given to me by my super awesome mother-in-law.

Ingredients

  • 1 pound salted codfish
  • 1 pound potatoes
  • 3 - eggs, lightly beat
  • 1 small onion, yellow, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • - salt and pepper

How To Make pasteis de bacalhau (codfish fritters)

  • Step 1
    desalt the cod in water overnight, changing water atleast once.
  • Step 2
    Add enough water to pan to boil the potatoes and cod, cook until potatoes are done.
  • Step 3
    Remove skin and bones from cod.
  • Step 4
    Mash potatoes and cod in a bowl.
  • Step 5
    Add the egg, onion, garlic, parsley, salt & pepper, mix.
  • Step 6
    Form the fritter - take a soup spoon and scoop a good amount of the cod mixture and place another spoon on top to mold and place on wax paper.
  • Step 7
    Deep fry until browned and drain on paper towels.
  • Step 8
    Enjoy either hot or cold.
