This is not my recipe. I got it from a local restaurant's cook book. I have had it there but never made it myself..maybe one day when i catch my breath,lol.

Ingredients
- 1/4 cup butter
- 4 - slices of bacon chopped
- 2 tablespoons minced garlic
- 2 tablespoons minced onion
- 2 tablespoons jack daniels tennessee whiskey 2 tablespoons of pernod
- 1 cup chicken stock
- 1/2 teaspoon sea salt
- 1/2 teaspoon cayenne pepper
- 16 ounces fresh chopped spincah
- 24 - oysters on the half shell
- 1/4 cup grated parmesan cheese
How To Make oysters "jack"erfeller

Step 1Melt the butter in a sauce pan add bacon. saute bacon for 15 min . add onion and saulte until translucent. add the garlic

Step 2Add Whiskey and liqueur(Pernod), stirring to deglaze the saucepan. stirr in chicken stock, sea salt and cayenne pepper. Reduce the heat adn simmer for 20 min or until it is reduced by one half. Remove from heat and stir in spinach.

Step 3Remove the oysters from the half shells and spoon the spinach mixture into the shells. Return the oysters to the half shells and sprinkle with the cheese.

Step 4Arrange the oysters in a baking pan and Bake at 400 degrees for 10min.
