- 1-2 pound lobster, cooked and chunks
- 2 tablespoons celery, chopped
- 4 tablespoons mayonnaise
- 1 teaspoon lemon juice, fresh
- 2 teaspoons all purpose greek seasoning
- 1/2 teaspoon black pepper
- 1 tablespoon fennel leaves, dried
- 4 tablespoons butter, unsalted
- 4 slices toasted bread

Step 1in a mixing bowl, combine ingredients 1-7. fold gently so that the lobster chunks do not break. chill for 15 minutes. spread butter on toast. place 4 equal pprtions of lobster on the buttered side up toast. enjoy! **this will be good with shrimp, chicken, tuna and even grilled firm tofu**
