This is an amazing shrimp cocktail.

Ingredients

  • 5 cups water
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon salt
  • 1 1/2 cups clamato juice
  • 1 cup ketchup
  • 1/4 cup orange soda
  • 2 limes, juiced
  • 2 tomatoes, diced
  • 1 seedless cucumber, diced
  • 1 jalapeno, seeded and minced
  • 2 cloves garlic, minced
  • 1 small onion, small dice
  • 1 cup finely chopped cilantro
  • 1 avocado, diced
  • 2 teaspoons hot sauce
  • tortillas chips, for serving

How To Make mexican shrimp cocktail

  • Step 1
    Add the salt to the water and bring to a boil.
  • Step 2
    Prepare a bowl of ice. Add the shrimp to the boiling water and cook for 2 or 3 minutes. Drain and place in the ice bowl to stop the cooking.
  • Step 3
    Chop the shrimp into smaller pieces and set aside.
  • Step 4
    In a large bowl combine the clamato juice, ketchup, orange soda, and lime juice. Stir in the tomatoes, cucumber, jalapeno, cilantro, and onion. taste and adjust for salt and pepper.
  • Step 5
    Stir in the shrimp and cover and refrigerate for 2 hours.
  • Step 6
    Just before serving stir in the avocado chunks. Serve with Tortilla chips
