I LOVE crab cakes. This recipe is very good.

These were a delightful surprise. All of the ingredients really combine to create something special. Even those in the Test Kitchen that don't typically like crab meat really enjoyed these!

Ingredients

  • 1 - egg
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic clove, minced
  • 3 dashes hot pepper sauce
  • 2 teaspoons worcestershire sauce
  • pinch salt
  • pinch white pepper
  • 2 pounds crabmeat
  • 1/2 - red bell pepper, minced
  • 1/2 - yellow bell pepper, minced
  • 2 - celery stalks, chopped fine
  • 1/2 - red onion, minced
  • 1/2 - jalapeno, peeled and minced
  • 3/4 cup bread crumbs
  • SAUCE INGREDIENTS
  • 2 teaspoons shallots, minced
  • 2 cups white wine, dry
  • 2 cups heavy cream
  • 4 tablespoons dijon mustard

How To Make maryland style crab cakes

  • Step 1
    Crab cakes: Combine egg, mayo, garlic, hot pepper sauce, worcestershire, salt and pepper; mix well to make a sauce.
  • Step 2
    Add pre-cooked crab meat, peppers, onion, celery and jalapeno.
  • Step 3
    Sprinkle breadcrumbs over mixture.
  • Step 4
    Carefully mix with hands to combine well; divide into 18 parts and each into a biscuit size cake.
  • Step 5
    Preheat oven to 450, then heat skillet with a mixture of butter and oil (1/2 and 1/2).
  • Step 6
    Cook cakes to light golden brown on one side; turn over and place in oven to bake 5 mins.- Do not overbrown.
  • Step 7
    Sauce: Boil shallots and wine until reduced by 3/4; stir in mustard then cream. Reduce to desired consistency; strain and serve.
