Just tried this recipe for the first time on Christmas Eve with my family and it was a hit! If you love shrimp, you must try this recipe. It is amazing!

2 lb
cooked medium shrim p, peeled and deveined
1 medium
red onion, cut into rings
3 medium
lemons, cut into slices
1 c
pitted ripe olives, drained
1/2 c
olive oil
1/3 c
minced fresh parsley
3 Tbsp
lemon juice
3 Tbsp
red wine vinegar
1 clove
garlic, minced
bay leaf
1 Tbsp
minced fresh basil or 1 teaspoon dried basil
1 tsp
ground mustard
1/4 tsp


1In a 3-qt. glass serving bowl, combine the shrimp, onion, lemons, and olives.
2In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat.
3Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.
