Every year we have a Christmas Open House and I make about 20 pounds of this marinated shrimp. It is one of the most popular items I serve. I think some come just to eat the shrimp.

Ingredients
- 2 pounds unpeeled, medium fresh shrimp
- 6 cups salted water
- 1/2 cup sugar
- 1 1/2 cups white vinegar
- 1 cup canola oil
- 1/4 cup capers, undrained
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons celery salt
- 3 medium red or white onions, sliced and separated into rings
How To Make marinated shrimp

Step 1Peel shrimp leaving tails on. De-vein if desired. Bring water to boil; add shrimp and cook 3 minutes or just until shrimp turns pin. Drain and rinse with cold water. Chill.

Step 2Combine sugar and next 5 ingredients in a shallow dish. Add shrimp alternately with onions. Cover and chill at least 6 hours, turning often. Drain and discard marinade before serving.
