lemony crab spread

My Dad used to love anything lemon flavored, from teas to entrees to baked goods. If it was lemon, it suited him well! I used to make this spread as an appetizer for many family get togethers, and particularly for his birthday. NOTE: May garnish with lemon wedges if desired. Imitation lobster or a combination yields tasty results as well!

Ingredients

  • 1 pound crabmeat (imitation, may use half crab, half lobster)
  • 1/4 cup chives (finely chopped)
  • 1 - lemon rind, grated
  • 4 teaspoons lemon juice (fresh)
  • 1 cup sour cream (may use nonfat or light if desired)
  • 1/2 teaspoon garlic powder
  • 1/3 cup mayonnaise
  • 1/2 teaspoon salt

How To Make lemony crab spread

  • Step 1
    Separate crabmeat until finely shredded.
  • Step 2
    In medium bowl, combine remaining ingredients. Add crabmeat, mix and chill (preferably overnight as the flavors mingle!)
  • Step 3
    Serve with crackers.
