jammin' coconut shrimp

Nothing says island paradise quite like the flavors of seafood and coconut doing their own little conga line over your tongue! One of my favorite summer treats, I adore this recipe. I hope you like jammin' too! NOTE: There are actually 2 varieties of the Jammin' Dipping Sauce that I'm providing, but they honestly both taste very similar. The first is probably just a tad healthier, but of course I prefer the second version!

Ingredients
- JAMMIN' COCONUT SHRIP
- 4 dozen medium shrimp, peeled and deveined
- Several dash salt and pepper
- Several dash garlic powder
- 1 1/2 cups flour
- 2 large eggs, beaten
- 3/4 cup shredded coconut
- JAMMIN' DIPPING SAUCE (VERSION #1)
- 4 ounces vanilla yogurt
- 1/2 cup crushed pineapple
- 2 tablespoons piña colada mix
- JAMMIN' DIPPING SAUCE (VERSION #2)
- 1/3 cup sour cream
- 1/3 cup crushed pineapple (drained)
- 1/2 cup coco lopez (cream of coconut)
How To Make jammin' coconut shrimp

Step 1Season the shrimp lightly with salt, pepper and garlic powder.

Step 2Dredge each shrimp in flour, then dip in egg. Dredge again in flour and then roll in coconut, coating thoroughly.

Step 3Arrange the prepared shrimp on a baking sheet and bake until golden brown, about 15-20 minutes. Serve with dipping sauce(s) if desired.

Step 4To make dipping sauce(s): Simply combine all ingredients in a small bowl, mix well. Enjoy!
