I tried this recipe as an appetizer, but like it as sandwich spread too! I wanted a unique appetizer for my parents 60th Wedding Anniversary Party. It was a BIG HIT!! :)Enjoy!

Ingredients
- 16 ounces pickled herring
- 1 1/2 cups sour cream
- 2 tablespoons lemon juice concentrate
- 1 medium onion, white
- 1 cup celery stalks
- 1/2 cup water chestnuts
- 1 teaspoon black pepper
- 2 medium apples
How To Make herring apple spread

Step 1Drain Herring and dice into bite-size pieces. Minced Onion, chopped Celery, Water Chestnuts, and Apples into bite-size pieces. Whip Sour Cream until it stands in soft peaks. Blend Sour Cream with Herring and ingredients. Blend well. Chill before serving. Serve on Lettuce Leaves and/or with crackers, bread.

Step 2Makes 6 to 8 servings. COOING TIP: I like to use 1 each of Granny Smith Apple and Roma Apple. This adds color and flavor to the appetizer. Sometimes, I substitute Green Onions for the White Onion.
