Ingredients

  • 1 pound Manila clams, cleaned and scrubbed
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/4 cup shallots, finely chopped
  • 1/4 cup red peppers, finely chopped
  • 1 clove (large) garlic, pressed or chopped
  • freshly ground mixed peppercorns, to taste
  • 1/4 teaspoon dried tarragon
  • 1/8 teaspoon red pepper flakes, or to taste
  • 1/2 cup dry white wine
  • 1/2 tablespoon freshly squeezed lemon juice
  • 1/2 tablespoon fresh chopped parsley
  • 4 lemon wedges, for serving

How To Make garlic and white wine steamed clams

  • Step 1
    In a large pot over medium heat, add butter and oil. When hot, add shallots and red peppers; sauté for 1 minute.
  • Step 2
    Add garlic, tarragon, and pepper flakes; sauté for 1 minute.
  • Step 3
    Pour in white wine and bring to a simmer before adding prepared clams. Stir well, cover, and steam for 5 to 7 minutes or until fully opened.
  • Step 4
    Pour in lemon juice and add parsley; stir well.
  • Step 5
    Discard unopened clams. Serve immediately with crusty or garlic bread.
