easy shrimp roll

This is a family favorite. Generally, we have it as a quick lunch but have included this a part of our "stir-fry" night occasionally.

Ingredients

  • 1 teaspoon sesame oil
  • 2 cups packaged cole slaw mix or shredded cabbage (bagged)
  • 4 - scallions, sliced
  • 1 dash texas pete (more to taste or can omit)
  • 1/2 pound large raw shrimp, peeled and deveined
  • 1 teaspoon soy sauce (more to your taste)
  • 1 - 10 inch flour tortilla, warmed

How To Make easy shrimp roll

  • Step 1
    Heat oil in a large, non stick pan or wok over medium-high heat.
  • Step 2
    Add coleslaw, scallions, and Texas Pete and stir fry until coleslaw just begins to wilt.
  • Step 3
    Move to one side of pan and add shrimp to pan to cook.
  • Step 4
    Once shrimp begins to turn opaque, combine shrimp and cole slaw mix.
  • Step 5
    Stir fry until shrimp are fully cooked. Add soy sauce and stir for about a minute longer.
  • Step 6
    Spoon filling onto tortilla and roll up. Cut in half (I usually cut on a diagonal).
