I created a loaded fries recipe with crawfish tails. It's great with chicken tenders and burgers.

Ingredients

  • 32 ounces frozen french fries
  • 2 tablespoons creole seasoning, divided
  • 6 bacon strips
  • 3 tablespoons pickled jalapeno liquid, divided
  • 1 pound crawfish tails, rinsed and drained
  • 1 tablespoon old bay seasoning
  • 1 red bell pepper, chopped
  • 1 vidalia sweet onion, diced
  • 1/2 cup margarine
  • 1 cup heavy cream
  • 5 teaspoons tabasco sauce
  • 8 ounces cream cheese, softened
  • 2 cups shredded Mexican cheese blend, divided

How To Make crawfish fries

  • Step 1
    Preheat oven to 400 degrees F.
  • Step 2
    Line a baking sheet with a aluminum foil and coat with cooking spray.
  • Step 3
    Add the frozen french fries onto a foil covered baking sheet. Season with 1 tablespoon creole seasoning.
  • Step 4
    Bake for 35 to 40 minutes or until crispy.
  • Step 5
    In a large skillet, cook the bacon over medium-low heat for 4 minutes until the bacon is cooked. Use tongs to get the bacon out of the skillet, saving the drippings.
  • Step 6
    Place the bacon on the paper towel filled plate, pat dry and crumble. Set aside.
  • Step 7
    Add 2 teaspoons jalapeno liquids into the skillet with the bacon drippings over medium heat and mix well.
  • Step 8
    Add the crawfish tails and season with Old Bay seasoning and remaining creole seasoning. Saute for 5 minutes until browned.
  • Step 9
    Stir in the chopped bell pepper and diced onion. Saute for 5 minutes more, until tender.
  • Step 10
    In a medium saucepan over medium heat, combine the margarine, remaining jalapeno liquids, heavy cream, hot sauce, cream cheese and 1 cup Mexican cheese. Stir for 6 minutes or until thickened.
  • Step 11
    Add the crawfish mixture onto the cheese sauce and mix well.
  • Step 12
    Pour the crawfish/cheese sauce mixture onto the fries. Top with the bacon bits and remaining Mexican cheese blend.
  • Step 13
    Return to the oven for 3 minutes until the cheese is bubbly.
