crab salad stuffed sweet mini peppers

While visiting in San DIEGo last minth. My daughter-in-law served me these sweet littl crunchy tiny peppers for a snack. As soon as I returned home...I searched and found them at a store here. I then decided to put together this delicious quick and easy cold appetizer. For color and taste ,I added the last of my yelow tear drop tomatoes from my garden, along with s a couple red radishes.

Ingredients

  • 1 package mini sweet peppers
  • 3/4 pound imitation crab salad from the deli
  • 2 small lettuce leaves
  • 1/3 pound imitation crab meat...cut small
  • 2 - radishes
  • 1 dash dill weed
  • 1 dash lemon pepper
  • 1 dash old bay seasoning

How To Make crab salad stuffed sweet mini peppers

  • Step 1
    wash and dry peppers. Cut lengh wise in half. Scrape the few tiny seed out. To the crab salad add the imitation crab meat cut up. Also mix in the Old Bay Seasoning,dill weed and the lemon pepper.
  • Step 2
    Fill the pepper cavities with the crab salad. Arrange on a serving plate, as shown. Sprinkle the tops ligtly with dill weed.
  • Step 3
    Decorate with lettuce leaves, radishes and tiny little tomatoes. Tint red tomatoes can be used for a pretty garnish. Work with what you have...play with it. Saran wrap and store in refrigerator.. Serve chilled, and enjoy.....Nancy P.....9/17/12
