Ingredients

·1/4 cup butter, 1/2 stick

·1/4 cup flour

·1 cup cream

·1/4 cup sherry

·salt and pepper to taste

·1 pound white crab meat

·3/4 cup grated sharp cheese

·1/8 to 1/4 t. cayenne pepper
How to Make Crab Meat Evangeline
- Heat butter in pan until melted. Stir in flour. Whisk in cream. Cook until thickened, stirring constantly. Stir in sherry. Season with salt and black pepper.
- . Remove from heat. Stir in crab meat. Spoon into a buttered baking dish. Sprinkle the cheese over crab meat mixture. Sprinkle with the cayenne pepper.
- Bake at 325 until cheese melts. Serve with cracker. May substitute 8 oz. crab meat and 8 oz. chopped cooked shrimp for the 1 pound crab meat. Serves 6 to 8
