Ingredients

  • ·
    1/4 cup butter, 1/2 stick
  • ·
    1/4 cup flour
  • ·
    1 cup cream
  • ·
    1/4 cup sherry
  • ·
    salt and pepper to taste
  • ·
    1 pound white crab meat
  • ·
    3/4 cup grated sharp cheese
  • ·
    1/8 to 1/4 t. cayenne pepper

How to Make Crab Meat Evangeline

Step-by-Step

  1. Heat butter in pan until melted. Stir in flour. Whisk in cream. Cook until thickened, stirring constantly. Stir in sherry. Season with salt and black pepper.
  2. . Remove from heat. Stir in crab meat. Spoon into a buttered baking dish. Sprinkle the cheese over crab meat mixture. Sprinkle with the cayenne pepper.
  3. Bake at 325 until cheese melts. Serve with cracker. May substitute 8 oz. crab meat and 8 oz. chopped cooked shrimp for the 1 pound crab meat. Serves 6 to 8
