confetti crab cakes

I wanted to surprise my DH by making some crab cakes for lunch. I found a basic recipe and tweaked it. They were so good, I thought I would share the recipe.

Ingredients For confetti crab cakes

  • 2 Tbsp
    margarine or butter, divided
  • 1/3 c
    onion, finely chopped
  • 1/3 c
    celery, finely chopped
  • 1/3 c
    bell pepper, finely chopped
  • 1 md
    carrot, peeled and grated
  • 1/2 c
    all-purpose baking mix
  • 2 tsp
    worcestershire sauce
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 c
    breadcrumbs, plain
  • 2 lg
    eggs, slightly beaten
  • 2 can
    crabmeat, 6 oz.
  • 1/4 tsp
    old bay seasoning
  • 1 Tbsp
    oil

How To Make confetti crab cakes

  • 1
    Melt 1 T margarine or butter over medium heat in a medium saucepan. Saute the onions, celery, bell pepper and carrots for 2-3 minutes.

    Drain the crab meat. Flake it into a medium bowl. Add sauteed vegetables. Add the breadcrumbs, baking mix, worcestershire sauce, salt, pepper, and old bay seasoning. Lightly beat the egg and add them to the mix. Stir to moisten all ingredients.

    Heat the 1 T oil and 1T margarine or butter over medium heat in a large frying pan. Divide the mixture into 4 large patties. Fry in the hot pan for 3 minutes per side til golden.
