Ingredients

  • 8 ounces blue cheese, softened
  • 8 ounces cream cheese, room temperature1
  • 1 tablespoon chives, chopped
  • 1 tablespoon parsley, chopped
  • 1 clove garlic, finely chopped
  • 1/2 cup dry white wine
  • 2 pounds shrimp, peeled and deveined
  • 4 slices lemon, cut as thin as possible and halved

How To Make blue cheese shrimp

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Blend, in a small bowl, blue cheese, cream cheese, chives, parsley and garlic; add wine to thin, you may not need it all.
  • Step 3
    Put 8 scallop shells, or large peices of foil on a cookie sheet. Fill the shells, or foil, with 1/8 of the cheese mixture each. Top each one with 1/8 of the shrimp and 1 piece of lemon.
  • Step 4
    Cover the shells with foil, or close the foil to for a packet. Bake on the cookie sheet for 20 minutes. Remove foil and enjoy.
