Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped, about 1 cup
- 1-2 - jalapeno chiles, seeded, minced
- 3 - garlic cloves, thinly sliced
- 1 pound tomatillos, chopped
- - salt
- 1/2 cup clam juice
- 1 pound shrimp, cleaned and deveined
- 1 cup cotija queso seco cheese (or feta)
- 1/4 cup cilantro, freshly chopped
- - lime juice
- - black pepper
How To Make baked shrimp with tomatillos

Step 1Add onions and jalapeños to pan with hot oil; cook on med-high heat for 5 minutes until the onions just begin to brown. At that point, add the garlic[ cook for a minute.

Step 2Add the tomatillos to the pan and reduce heat to med. Cook for 10 mins or until the tomatillos are cooked through but still hold their shape. Slowly add salt to the tomatillos as they are cooking in the pan.

Step 3Add clam juice to the pan, and cook over high heat until the liquid has reduced to about half the original amount.

Step 4Add cheese and shrimp to the pan and cook for 10 mins in a preheated 425 oven.

Step 5Stir in cilantro, black pepper and lime juice before serving.
