Ingredients
- 14 - baby new potatoes
- 2 tablespoons dijon mustard
- 1 stick olive oil
- 1 teaspoon old bay seasoning
- 1 - 8 oz pkg frozen peeled, cooked shrimp, thawed and chopped
- 4 ounces reduced-fat cream cheese, softened
- 1 cup shredded gouda cheese
- 5 slices cooked bacon, crumbled
- 1 teaspoon old bay seasoning
- 1/4 cup chopped fresh chives
How To Make bacon-shrimp stuffed potatoes

Step 1Heat oven to 425. Cut potatoes in 1/2 lengthwise. Scoop out potatoes, leaving a 1/4" shell. Cut a thin slice from bottom of potatoes, to leave them flat.

Step 2In bowl, whisk together mustard, oil and 1 tsp old bay seasoning. Brush insides of potato shells w/ oil mix. Place potatoes on a baking sheet. Bake until tender, about 30 mins.

Step 3In another bowl, combine shrimp, cream cheese, gouda cheese, bacon and 1 tsp old bay seasoning. Spoon filling into potato shells. Bake for 15 mins or until cheese is melted. Garnish w/ chives.
