I make these as an appetizer before making a seafood dish and it goes very well w/ any seafood dish.

baby new potatoes
2 Tbsp
dijon mustard
1 stick
olive oil
1 tsp
old bay seasoning
8 oz pkg frozen peeled, cooked shrimp, thawed and chopped
4 oz
reduced-fat cream cheese, softened
1 c
shredded gouda cheese
5 slice
cooked bacon, crumbled
1 tsp
old bay seasoning
1/4 c
chopped fresh chives

How to Make Bacon-shrimp stuffed potatoes


  • 1Heat oven to 425. Cut potatoes in 1/2 lengthwise. Scoop out potatoes, leaving a 1/4" shell. Cut a thin slice from bottom of potatoes, to leave them flat.
  • 2In bowl, whisk together mustard, oil and 1 tsp old bay seasoning. Brush insides of potato shells w/ oil mix. Place potatoes on a baking sheet. Bake until tender, about 30 mins.
  • 3In another bowl, combine shrimp, cream cheese, gouda cheese, bacon and 1 tsp old bay seasoning. Spoon filling into potato shells. Bake for 15 mins or until cheese is melted. Garnish w/ chives.
