I make these as an appetizer before making a seafood dish and it goes very well w/ any seafood dish.

    baby new potatoes
  • 2 Tbsp
    dijon mustard
  • 1 stick
    olive oil
  • 1 tsp
    old bay seasoning
  • 1
    8 oz pkg frozen peeled, cooked shrimp, thawed and chopped
  • 4 oz
    reduced-fat cream cheese, softened
  • 1 c
    shredded gouda cheese
  • 5 slice
    cooked bacon, crumbled
  • 1 tsp
    old bay seasoning
  • 1/4 c
    chopped fresh chives

How to Make Bacon-shrimp stuffed potatoes


  1. Heat oven to 425. Cut potatoes in 1/2 lengthwise. Scoop out potatoes, leaving a 1/4" shell. Cut a thin slice from bottom of potatoes, to leave them flat.
  2. In bowl, whisk together mustard, oil and 1 tsp old bay seasoning. Brush insides of potato shells w/ oil mix. Place potatoes on a baking sheet. Bake until tender, about 30 mins.
  3. In another bowl, combine shrimp, cream cheese, gouda cheese, bacon and 1 tsp old bay seasoning. Spoon filling into potato shells. Bake for 15 mins or until cheese is melted. Garnish w/ chives.
