bacon and parmesan oysters on the half shell

Easy to make and yummy. I got this recipe from a locals pub when I was living on the Outer Banks of North Carolina. I've found the easiest way to shuck the oysters is to either place them on a hot grill or in a very hot oven just until they start to open, then shuck them. You can make as little or a many as you want. I usually make 2 to 3 dozen. Finely shredded mozzerella is also good on top. Also, you can adjust the toppings to suit your taste.

- per oyster teaspoon cocktail sauce
- per oyster teaspoon bacon, cooked and chopped
- per oyster teaspoon parmigiano-reggiano, grated

Step 1Shuck oysters. Top each oyster with cocktail sauce, bacon, then parmesan cheese. Grill or broil until cheese is bubbly and brown. Be sure to keep an eye on them, you don't want to over cook them...the oysters should be moist. Enjoy!!
