Ingredients For artichoke and crab balls

  • 2 c
    bread crumbs, seasoned
  • 14 oz
    artichoke hearts, canned - drained and mashed
  • 1 can
    crabmeat, flaked
  • 2
    eggs, beaten
  • 1 c
    parmesan cheese, grated
  • 2 clove
    garlic, crushed
  • 1/3 c
    olive oil, any flavor

How To Make artichoke and crab balls

    Heat the oil in a heavy non-stick pan over medium high heat. Saute garlic for about 3 minutes. Then add the mashed artichoke hearts and crab meat and cook for 2-3 minutes until hot.

    Stir in the eggs and cook 2-3 minutes until they begin to set. Stir in 1-1/2 cups of the bread crumbs and salt and pepper to taste and cook another 2 minutes until hot. Remove from the heat. Stir in the cheese. Mix thoroughly and set aside to cool.

    Preheat oven to 350F. When mixture is cool enough to handle, roll into bite size balls. Roll balls in additional breadcrumbs and arrange on a baking sheet. Bake for 10 minutes.
