Ingredients For artichoke and crab balls

2 cbread crumbs, seasoned

14 ozartichoke hearts, canned - drained and mashed

1 cancrabmeat, flaked
-
2eggs, beaten
-
1 cparmesan cheese, grated

2 clovegarlic, crushed

1/3 colive oil, any flavor
How To Make artichoke and crab balls

1Heat the oil in a heavy non-stick pan over medium high heat. Saute garlic for about 3 minutes. Then add the mashed artichoke hearts and crab meat and cook for 2-3 minutes until hot.

2Stir in the eggs and cook 2-3 minutes until they begin to set. Stir in 1-1/2 cups of the bread crumbs and salt and pepper to taste and cook another 2 minutes until hot. Remove from the heat. Stir in the cheese. Mix thoroughly and set aside to cool.

3Preheat oven to 350F. When mixture is cool enough to handle, roll into bite size balls. Roll balls in additional breadcrumbs and arrange on a baking sheet. Bake for 10 minutes.
