Ingredients
- 1 can 10.25 oz. can condensed tomato soup
- 3 packages 3-oz. pkgs. cream cheese, softened - cut into chunks (light cream cheese may be substituted)
- 1 envelope unflavored plain gelatin
- 1/4 cup cold water
- 2 cups cooked shrimp, peeled and cut into pieces
- 1 cup mayonnaise (can use light)
- 1 small onion, grated
- 1/2 cup celery, minced
- dash of garlic powder, salt and freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh flat-leaf parsley, minced
- plain crackers
How To Make appetizer shrimp mold

Step 1Add undiluted soup to a large saucepan over medium heat. Add the cubed cream cheese, stirring constantly, until the cream cheese has melted fully.

Step 2In a small bowl, soak gelatin in cold water until dissolved. Add the gelatin to the hot cheese mixture. Remove from heat and let cool approx. 30 min.

Step 3Once cool, add shrimp, mayonnaise, onion, celery, garlic powder, salt, pepper, lemon juice and parlsey and stir to blend.

Step 4Pour the mixture into a large 2 quart oiled mold or dish with decorative rimmed sides. When ready to serve, run a knife around the edge of the mold and then dip mold quickly in hot water. Invert onto a serving platter.

Step 5Garnish or decorate around molded dip. Serve with plain crackers.
