This shrimp mold is served often at parties and gatherings.

Ingredients

  • 1 can 10.25 oz. can condensed tomato soup
  • 3 packages 3-oz. pkgs. cream cheese, softened - cut into chunks (light cream cheese may be substituted)
  • 1 envelope unflavored plain gelatin
  • 1/4 cup cold water
  • 2 cups cooked shrimp, peeled and cut into pieces
  • 1 cup mayonnaise (can use light)
  • 1 small onion, grated
  • 1/2 cup celery, minced
  • dash of garlic powder, salt and freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh flat-leaf parsley, minced
  • plain crackers

How To Make appetizer shrimp mold

  • Step 1
    Add undiluted soup to a large saucepan over medium heat. Add the cubed cream cheese, stirring constantly, until the cream cheese has melted fully.
  • Step 2
    In a small bowl, soak gelatin in cold water until dissolved. Add the gelatin to the hot cheese mixture. Remove from heat and let cool approx. 30 min.
  • Step 3
    Once cool, add shrimp, mayonnaise, onion, celery, garlic powder, salt, pepper, lemon juice and parlsey and stir to blend.
  • Step 4
    Pour the mixture into a large 2 quart oiled mold or dish with decorative rimmed sides. When ready to serve, run a knife around the edge of the mold and then dip mold quickly in hot water. Invert onto a serving platter.
  • Step 5
    Garnish or decorate around molded dip. Serve with plain crackers.
