Ingredients For tequila-lime chicken wings

1/4 ctequila

2 Tbspfreshly squeezed lime juice

1/2 tsplime zest

3 Tbspagave nectar, or to taste

1 Tbspcholula hot sauce

1 tspground cumin
-
1 tspchipotle chili powder
-
1/2 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

1 Tbspfinely chopped cilantro, for garnish

1/2 cunbleached all-purpose flour
-
1/2 tspgarlic powder
-
1/2 tspsmoked paprika
-
1/2 tspground cumin
-
1 to 1 1/2 lbchicken wings

1 Tbspgrapeseed oil, or as needed
-
1/2 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

1 tspcholula hot sauce, or to taste
How To Make tequila-lime chicken wings

1In a small saucepan over medium heat, add tequila, lime juice and zest, agave nectar, hot sauce, ground cumin, chipotle chili powder and freshly ground black pepper.

2Whisk the ingredients until nicely blended and simmer gently for 1 hour or until the sauce coats the back of a spoon while the wings are baking in the oven, stirring occasionally – if it’s too hot, reduce the heat.

3In a large re-sealable plastic bag, add flour, garlic powder, smoked paprika and ground cumin. Close the bag and shake until blended.

4In a large bowl, add wings and drizzle on oil, enough to coat, and season with freshly ground black pepper and hot sauce; toss or stir to coat. Follow the rest of the steps from Baked Chicken Drumettes and Wings.

5When wings are baked, pour half the sauce over the wings, toss or stir to coat and return them to the oven with the temperature off for 10 minutes.

6When time is up, we’ll pour the remaining sauce over the chicken wings, coat well and serve immediately with chopped cilantro.
