Sometime mistakes produce the most amazing results. I had about 200 chicken wings in a brine (for a client), and for some unforgivable reason, I forgot about them. So, they were totally over-brined… solution. Well, we will talk about that later (think potato starch). What started as a mistake, came out in a brilliant recipe. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 quarts filtered water
  • 1/4 cup salt, kosher variety
  • 1 pound chicken wings
  • 1/2 cup potato starch
  • THE SAUCE
  • 2 tablespoons sweet butter, unsalted
  • 2 teaspoons hot sauce, franks
  • 1 teaspoon tamari sauce, or liquid aminos

  • Step 1
    PREP/PREPARE
  • Step 2
    Have you ever made a soup or stew that is too salty… Well, one of the ways to reduce the salt is to put a potato or two in the soup… so my idea was to use potato starch, and I am never going back…
  • Step 3
    Gather your Ingredients (mise en place).
  • Step 4
    Add the salt and water to a bowl, add the chicken wings, and place in the fridge for two hours.
  • Step 5
    Place a rack in the middle position, and preheat the oven to 375f (190c).
  • Step 6
    Remove the wings from the fridge and dry off with paper towels, or a tea towel.
  • Step 7
    Toss with the potato starch, and place on a baking sheet, fitted with a wire rack.
  • Step 8
    Place in the preheated oven, and bake for 20 minutes.
  • Step 9
    Flip the wings, increase the heat to 425f (220c), and bake for an additional 20 minutes.
  • Step 10
    PLATE/PREPARE

    Toss with your favorite sauce, and serve. Enjoy.
