Poultry Essentials: Ultimate Chicken Wing Base

Sometime mistakes produce the most amazing results. I had about 200 chicken wings in a brine (for a client), and for some unforgivable reason, I forgot about them. So, they were totally over-brined… solution. Well, we will talk about that later (think potato starch).

What started as a mistake, came out in a brilliant recipe.

So, you ready… Let’s get into the kitchen.

  • 2 qt
    filtered water
  • 1/4 c
    salt, kosher variety
  • 1 lb
    chicken wings
  • 1/2 c
    potato starch

  • 2 Tbsp
    sweet butter, unsalted
  • 2 tsp
    hot sauce, franks
  • 1 tsp
    tamari sauce, or liquid aminos

How to Make Poultry Essentials: Ultimate Chicken Wing Base


  2. Have you ever made a soup or stew that is too salty… Well, one of the ways to reduce the salt is to put a potato or two in the soup… so my idea was to use potato starch, and I am never going back…
  3. Gather your Ingredients (mise en place).
  4. Add the salt and water to a bowl, add the chicken wings, and place in the fridge for two hours.
  5. Place a rack in the middle position, and preheat the oven to 375f (190c).
  6. Remove the wings from the fridge and dry off with paper towels, or a tea towel.
  7. Toss with the potato starch, and place on a baking sheet, fitted with a wire rack.
  8. Place in the preheated oven, and bake for 20 minutes.
  9. Flip the wings, increase the heat to 425f (220c), and bake for an additional 20 minutes.
  11. Toss with your favorite sauce, and serve. Enjoy.
  12. Keep the faith, and keep cooking.
