Poultry Essentials: Sticky Orange Marmalade Wings

Went to bed last night, and got up at midnight… decided to go outside, but I needed something to nosh on, so I found some chicken wings in the walk-in… did not have a particular recipe in mind, so I winged it (pun intended).

I ate them out by the pond, while counting all the Summer fireflies. Oh, and wine… there will always be wine.

So, you ready… Let’s get into the kitchen.

  • 3 Tbsp
    grapeseed oil
  • 1 tsp
    sriracha sauce
  • 1 tsp
    baking soda
  • 1 tsp
    white pepper, freshly ground
  • 1/2 tsp
    salt, kosher variety
  • 12 - 14
    chicken wings, separate the drums from the flats, then freeze the tips and reserve for making stock

  • 1/2 c
    orange marmalade
  • 1 Tbsp
    sweet chili sauce
  • 2 tsp
    sesame oil
  • 1 Tbsp
    tamari sauce
  • 1 tsp
    coconut sugar
  • 1 tsp
    ginger powder

How to Make Poultry Essentials: Sticky Orange Marmalade Wings


  2. Gather your Ingredients (mise en place).
  3. Mix all the ingredients for the wings together.
  4. Throw in the wings, toss, and allow to rest for 30 minutes.
  5. Place a rack in the middle position, and preheat the oven to 400f (205c).
  6. Place a rack in a parchment-lined baking sheet, and spread the wings on the rack.
  7. Place in the preheated oven, and bake until the wings are cooked and golden brown, about 40 – 50 minutes.
  8. While the wings are baking, place all the ingredients for the glaze into a small saucepan, and slowly bring up to a light simmer.
  10. Serve the wings with the sauce on the side at your next casual party, or just make them and eat them, because you can. Enjoy.
  11. Keep the faith, and keep cooking.
