poultry essentials: honey garlic wings
I suppose that this is just one more wing recipe in an ocean of others. To me, it is not about the wings as much as it is the spices and sauces, that we use with them. This is combination of spices that bring out the flavors of the wings. A little bit of heat, and a little bit of sweet. This will be our snack for Dinner-and-Movie night. So, you ready… Let’s get into the kitchen.

Ingredients

- 12 chicken wings
- 1 tablespoon grapeseed oil, or other non-flavored variety
- 1/4 cup flour, all-purpose variety
- salt, kosher variety, to taste
- white pepper, freshly ground, to taste
- THE SAUCE
- 1/2 cup fresh clover honey
- 4 tablespoons tamari sauce, or amino acids
- 4 cloves garlic minced
- 1 tablespoon ginger powder
- 1/2 teaspoon crushed chili flakes
- 1/3 cup filtered water

Step 2The Truth About Chicken Wings… Well, Kinda NEWS FLASH Buffalo wings were not created at the Anchor Bar in Buffalo, NY. They were invented at a restaurant in Naples, Italy. Years ago, chicken wings were not as popular as they are now. As a matter of fact, today it is a multi-billion-dollar industry. I was working at a large restaurant in Naples that served lunch and dinner, and closed at 2:00a. Among all the things the exec chef ordered, he always ordered whole chickens and we would have to cut them up. I got so good a cutting up a chicken that I could do it in under 2 minutes. Anyway, the wings were usually put into the freezer to use for making things like stock. However, it came to the point that we had more frozen wings that we needed, and the rest got thrown into the trash. The exec would hold up a bag of wings and say: Non vale il prezzo di una puttana (not worth the price of a whore), laugh, and toss them into the trash. But that changed when the Naval Fleet was in town. As you might know, the prostitutes followed the fleet and when they were in Naples around 2:00a when all the sailors were back on their ships, a bunch of them would gather at the backdoor of the kitchen for food. The exec would instruct us to heat up any leftover pasta, with some sauce, and one other thing. He would take out some of those chicken wings, and deep fry them. Now, I will admit they did not have a dipping sauce; they ate them with salt and pepper, but they were deep-fried wings. So, TAKE THAT Anchor Bar & Grill :-)

Step 3Gather your ingredients (mise en place).

Step 4Place a rack in the middle position and preheat the oven to 425f (220c).

Step 5Place the wings in a bowl, toss with the oil, and then add the flour, plus a bit of salt and pepper.

Step 6Place the wings on a parchment-lined rimmed baking sheet, fitted with a wire rack.

Step 7Using an oil mister, spray some olive oil on the wings… Or you could just brush some on the wings.

Step 8Add the wings to the preheated oven and bake until beginning to brown, about 30 – 35 minutes.

Step 9While the wings are baking, add the sauce ingredients to a small saucepan, and simmer until it begins to thicken, about 15 – 20 minutes. Remove from heat and reserve.

Step 10Remove the wings from the oven and toss with half the sauce.

Step 11Bake for another 10 minutes, until they are nice and brown.

Step 13Toss with the remaining sauce and serve while nice and hot. I like to serve mine with blue cheese dressing. Enjoy.
