Ingredients

  • 3/4 cup roasted/salted peanuts, finely chopped
  • 1/2 cup panko bread crumbs
  • 1/4 cup fresh cilantro, chopped
  • salt and pepper
  • 2 pkgs. boneless, skinless chicken breasts, cur crosswise into 24 thin strips
  • 3 tablespoons vegetable oil
  • 1/2 cup mayonnaise
  • 1-2 teaspoon asian chili garlic sauce (or you can use sweet chili sauce)

How To Make peanut-coated chicken strips with dipping sauce

  • Step 1
    In a shallow dish, combine crushed peanuts, bread crumbs, cilantro and 1/2 tsp. salt & pepper.
  • Step 2
    Coat chicken pieces in crumb mixture (pressing gently to help the coating adhere to the chicken).
  • Step 3
    Heat the oil in a large nonstick skillet over medium-high heat. Cook the chicken in batches until golden brown - 2-3 minutes per side. Add more oil if necessary.
  • Step 4
    Transfer to a platter when done. Meanwhile, combine the mayo and chili garlic sauce (or sweet chili sauce) and serve with chicken.
