    How to make easy peal hard boiled eggs Family poke a needle into round end of egg about ¼ inch and remove needle. Boil as usual. Theory is to make steam inside egg to seperate egg from shell. I've always brought the eggs to a rolling boil, turned off the heat, waited 10 to 13 minutes, drained, soaked in ice water a few minutes.....then peeled right off clean as a whistle. I am sorry you've had so much trouble but glad you've worked out a solution. Jean Fisher - 12 minutes ago I also learned a neat trick for hard boiled eggs from a cooking magazine called Cooks Illustrated. Took a years subscription to see how it was. Many hints for amazing ways to fix food. For the hard boiled eggs - put a pot with an inch or more of water. Then insert a steamer basket. Put eggs in steamer basket and boil for 12 minutes. with the lid on. Then fix a bowl with ice cubes and cold water. Put the steamed eggs in the ice water for about 10 minutes. They peel perfectly.

    .A less sophisticated technique that I learned and use is to use a spoon around and in between the egg and the shell. Start in the middle and do each end. Works very fast once you get the technique down.
