genovese wings, pesto chicken wings
I had entered this recipe in a wings contest. Not sure if it got picked, but it was so good. The pesto baked in is killer.

Ingredients
- 10 packages chicken wings
- 2 cups all purpose flour
- 2 large eggs
- 2 tablespoons water
- 3 tablespoons soul food seasoning
- 3 sprigs thyme, leaves
- 1 sprig rosemary sprigs
- 4 ounces pesto
- 2 sprigs parsley
- 2 teaspoons salt and pepper
- 3 cups veg oil
- 3 tablespoons duck fat
How To Make genovese wings, pesto chicken wings

Step 1Marinate chicken with thyme, rosemary, salt, pepper, soul food seasoning, and a little pesto. Marinate for 1 1/2 hours

Step 2In a bag put flour and a bit of seasoning. Add water to egg. Dredge chicken in egg then flour.

Step 3Heat veg oil and duck fat together until hot. Fry chicken for 5-8 mins each side, until golden brown

Step 4Place chicken on baking sheet and brush with pesto ad season with salt and pepper

Step 5Bake for 10-15 mins. Sprinkle chopped parsley. ENJOY!!!
