Ingredients
- 1 cup chopped cooked skinless chicken breasts or thights,
- 2 tablespoons olive oil, divided
- 1 - 12-inch prepared and packaged pizza crust
- 1/4 cup bottled satay peanut sauce
- 1/2 cup sliced brown mushrooms
- 1/4 cup chopped yellow onion
- 3 tablespoons minced chives
- 1/2 cup shredded monterey jack cheese
- 1/2 cup freshly grated parmesan cheese

Step 11. Preheat the oven or barbecue grill to 350°F. Take the prepared pizza crust out of the package and let it come to room temperature.

Step 22. In a small bowl, mix the chicken with 1 tablespoon olive oil.

Step 33. Spread 1 tablespoon olive oil on the pizza crust, and put the crust in the oven or barbecue for 5 minutes. Remove and let cool while you turn the heat up to 425˚F.

Step 44. Top the flatbread or pizza crust with peanut sauce and cover with the chicken, mushrooms, onions, chives, and cheeses. Bake 10–15 minutes, until the cheese is melted and the pizza edges are lightly browned.
