- 4 large eggs, hard-cooked and peeled
- 3 tablespoons mayonnaise
- 1 tablespoon prepared chimichurri sauce
- - salt and black pepper to taste
- 1/2 - roasted red bell pepper, sliced

Step 1Split eggs and remove yolks. Place yolk in a bowl and mash thoroughly with a fork.

Step 2Stir in the mayo, chimichurri and salt and black pepper to taste.
