Ingredients

  • 4 large eggs, hard-cooked and peeled
  • 3 tablespoons mayonnaise
  • 1 tablespoon prepared chimichurri sauce
  • - salt and black pepper to taste
  • 1/2 - roasted red bell pepper, sliced

How To Make chimichurri stuffed eggs (huevos rellenos)

  • Step 1
    Split eggs and remove yolks. Place yolk in a bowl and mash thoroughly with a fork.
  • Step 2
    Stir in the mayo, chimichurri and salt and black pepper to taste.
  • Step 3
    Garnish with the slices of roasted pepper.
