  • 4 large
    eggs, hard-cooked and peeled
  • 3 Tbsp
  • 1 Tbsp
    prepared chimichurri sauce
  • ·
    salt and black pepper to taste
  • 1/2
    roasted red bell pepper, sliced

How to Make Chimichurri Stuffed Eggs (Huevos Rellenos)


  1. Split eggs and remove yolks. Place yolk in a bowl and mash thoroughly with a fork.
  2. Stir in the mayo, chimichurri and salt and black pepper to taste.
  3. Garnish with the slices of roasted pepper.
