Chicken Croquettes

ricotta, chicken and cheddar .. oooo sooo good and easy dish

1/3 c
just under ... of butter
1 1/8 c
all purpose flour
1 c
hot milk
1/2 c
ricotta cheese
1 c
cooked chicken chopped
1/4 c
cheddar cheese grated
2 Tbsp
chopped fresh parsley
egg lightly beaten
1/2 c
dried bread crumbs
oil for frying


1melt butter in sauce panover medium heat,stir in 1 1/2oz flour and cook,stiring for 30 sec.
wisk in milk and cook, stirring for 4-5 minutes or until mixture thickens.
2remove from heat and stir in ricotta, chicken,cheese and parsley mis well til combined and refrigerate until completely cold
3shape misture into Croquettes,roll in remaining flour, then dip in egg and roll in breadcrumbs. Place on plate lined with plastic food wrap .cover and chill for 15 minutes
4heat oil in a large sauce pan and cook Croquettes 3-4 minutes or until golden in color.
