tori's bean dip
My daughter, Tori, is vegetarian. Finding things she likes to eat that everyone else will as well is sometimes difficult. This is a recipe she had at a party with her boyfriend's family, and loves.

Ingredients
- 1 can refried beans
- 1/2 can rotel tomatoes
- 1 - block cream cheese
- 1 - fajita seasoning mix (gluten free was the original recipe)
- - cheddar cheese
How To Make tori's bean dip

Step 1Put softened cream cheese on the bottom of a microwave safe bowl. Cover with beans, tomatoes and seasoning mix, mixed together. Microwave at 1 minute intervals until heated. Serve with tortilla chips.

Step 2Or pour into dish, sprinkle cheese on top, and bake at 350 degrees for 30 min.

Step 3Tori's note was she would mix the cheddar into the beans more, as hers was hard on top when she ate it...

Step 4If doubling the recipe, Tori only uses 1 fajita mix, and doubles all else.
