This is my personal twist on an old favorite - Texas Caviar. My husband's family is from San Antonio, and like strong flavors like cilantro and garlic, so I adapted this to include a little something for everyone.

Ingredients

  • 1 can(s)
    black beans
  • 1 can(s)
    white corn
  • 1 can(s)
    black-eyed peas
  • 1 can(s)
    rotel, drained, the spicy kind if you like it
  • 2-3
    tomatoes, chopped
  • 3-4
    chives (green onions), chopped
  • 1
    bell pepper, green or red
  • 2
    jalepenos
  • 1-2 bunch
    cilantro, chopped
  • 2-4 or mor clove
    garlic, minced
  • 1 pkg
    bleu cheese
  • 1/2 tsp
    salt
  • 1
    onion, chopped

How to Make Texas Caviar - Roeder style

Step-by-Step

  1. chop and mix all, chill for a couple of hours or overnight to allow flavors to mingle. Add more or less of whatever you like.
  2. top with sour cream and garnish with a sprig of cilantro, if desired
  3. serve with chili cheese bites or parmesan toiles or corn chips, or like my husband, by the spoon full!
