texas caviar - roeder style

This is my personal twist on an old favorite - Texas Caviar. My husband's family is from San Antonio, and like strong flavors like cilantro and garlic, so I adapted this to include a little something for everyone.

Ingredients

  • 1 can black beans
  • 1 can white corn
  • 1 can black-eyed peas
  • 1 can rotel, drained, the spicy kind if you like it
  • 2-3 - tomatoes, chopped
  • 3-4 - chives (green onions), chopped
  • 1 - bell pepper, green or red
  • 2 - jalepenos
  • 1-2 bunch cilantro, chopped
  • 2-4 or mor cloves garlic, minced
  • 1 package bleu cheese
  • 1/2 teaspoon salt
  • 1 - onion, chopped

How To Make texas caviar - roeder style

  • Step 1
    chop and mix all, chill for a couple of hours or overnight to allow flavors to mingle. Add more or less of whatever you like.
  • Step 2
    top with sour cream and garnish with a sprig of cilantro, if desired
  • Step 3
    serve with chili cheese bites or parmesan toiles or corn chips, or like my husband, by the spoon full!
