texas caviar - roeder style
This is my personal twist on an old favorite - Texas Caviar. My husband's family is from San Antonio, and like strong flavors like cilantro and garlic, so I adapted this to include a little something for everyone.

Ingredients
- 1 can black beans
- 1 can white corn
- 1 can black-eyed peas
- 1 can rotel, drained, the spicy kind if you like it
- 2-3 - tomatoes, chopped
- 3-4 - chives (green onions), chopped
- 1 - bell pepper, green or red
- 2 - jalepenos
- 1-2 bunch cilantro, chopped
- 2-4 or mor cloves garlic, minced
- 1 package bleu cheese
- 1/2 teaspoon salt
- 1 - onion, chopped
How To Make texas caviar - roeder style

Step 1chop and mix all, chill for a couple of hours or overnight to allow flavors to mingle. Add more or less of whatever you like.

Step 2top with sour cream and garnish with a sprig of cilantro, if desired

Step 3serve with chili cheese bites or parmesan toiles or corn chips, or like my husband, by the spoon full!
