This is my personal twist on an old favorite - Texas Caviar. My husband's family is from San Antonio, and like strong flavors like cilantro and garlic, so I adapted this to include a little something for everyone.

Ingredients

1 can(s)
black beans
1 can(s)
white corn
1 can(s)
black-eyed peas
1 can(s)
rotel, drained, the spicy kind if you like it
2-3
tomatoes, chopped
3-4
chives (green onions), chopped

bell pepper, green or red

jalepenos
1-2 bunch
cilantro, chopped
2-4 or mor clove
garlic, minced
1 pkg
bleu cheese
1/2 tsp
salt

onion, chopped

How to Make Texas Caviar - Roeder style

Step-by-Step

  • 1chop and mix all, chill for a couple of hours or overnight to allow flavors to mingle. Add more or less of whatever you like.
  • 2top with sour cream and garnish with a sprig of cilantro, if desired
  • 3serve with chili cheese bites or parmesan toiles or corn chips, or like my husband, by the spoon full!
