Inspired by the Santa Fe Spinach Dip at Cheddar's Restaurant, I get lots of requests for this recipe at parties.

Ingredients

  • 1 package cream cheese or neufchatel, 8 oz.
  • 1 cup sour cream
  • 1/3 cup salsa
  • 1 package frozen spinach, thawed and drained thoroughly
  • 1/3 cup diced onion
  • 1/4 cup shredded cheddar or cojack cheese
  • - garlic powder to taste

How To Make southwestern spinach dip

  • Step 1
    Press thawed spinach in a sieve with spatula to remove as much moisture as possible.
  • Step 2
    In microwave-safe bowl, melt cream cheese or neufchatel on medium for 30-60 seconds depending on your microwave. Watch closely as microwaves vary.
  • Step 3
    Add remaining ingredients except for shredded cheese and stir to combine throughly.
  • Step 4
    Top with shredded cheese and place in dip-sized slow-cooker or Crock-Pot. Serve warm with tortilla chips.
