Inspired by the Santa Fe Spinach Dip at Cheddar's Restaurant, I get lots of requests for this recipe at parties.

  • 1 pkg
    cream cheese or neufchatel, 8 oz.
  • 1 c
    sour cream
  • 1/3 c
  • 1 pkg
    frozen spinach, thawed and drained thoroughly
  • 1/3 c
    diced onion
  • 1/4 c
    shredded cheddar or cojack cheese
  • ·
    garlic powder to taste

How to Make Southwestern Spinach Dip


  1. Press thawed spinach in a sieve with spatula to remove as much moisture as possible.
  2. In microwave-safe bowl, melt cream cheese or neufchatel on medium for 30-60 seconds depending on your microwave. Watch closely as microwaves vary.
  3. Add remaining ingredients except for shredded cheese and stir to combine throughly.
  4. Top with shredded cheese and place in dip-sized slow-cooker or Crock-Pot. Serve warm with tortilla chips.
