Inspired by the Santa Fe Spinach Dip at Cheddar's Restaurant, I get lots of requests for this recipe at parties.

1 pkg
cream cheese or neufchatel, 8 oz.
1 c
sour cream
1/3 c
1 pkg
frozen spinach, thawed and drained thoroughly
1/3 c
diced onion
1/4 c
shredded cheddar or cojack cheese
garlic powder to taste

How to Make Southwestern Spinach Dip


  • 1Press thawed spinach in a sieve with spatula to remove as much moisture as possible.
  • 2In microwave-safe bowl, melt cream cheese or neufchatel on medium for 30-60 seconds depending on your microwave. Watch closely as microwaves vary.
  • 3Add remaining ingredients except for shredded cheese and stir to combine throughly.
  • 4Top with shredded cheese and place in dip-sized slow-cooker or Crock-Pot. Serve warm with tortilla chips.
