shrimp paste spicy deviled eggs
I always use a pressure cooker for hard-boiled eggs. 10 minutes and then plunged into ice water, and they peel perfectly. There is a lot of umami in these eggs. So much better than just plain old deviled eggs.

- 4 large eggs
- 3 tablespoons garlic aioli
- 2 teaspoons calamansi juice or lemon juice
- 2 teaspoons sambal olek
- salt
- TOPPING
- 1 tablespoon butter
- 3 tablespoons panko bread crumbs
- 1 teaspoon shrimp paste

Step 1Place the 4 eggs in a pressure cooker and set it to 10 minutes. Quick release. Plunge the eggs in ice water.

Step 2Peel the eggs and cut them in half. Place the yolks in a separate bowl.

Step 3Add the aioli, calamansi juice, and chili paste.

Step 4Fill the whites of the eggs.

Step 5Place the butter in a saucepan. Add the shrimp paste and Panko crumbs. Brown the Panko.

Step 6Sprinkle over the eggs.
