This is from the Best of Louisianna cookbook. I made this as a appetizer for a Christmas dinner at my daughters. My grandkids who don't care for spinach loved this. I modified recipe and used pre made french bread loafs from store and spread the mixture on top and baked it. Really good.

2french bread loaves

2 pkg10 0z each frozen chopped spinach

2 Lbshot pork sausage

4 Tbschopped onion

2eggs

20 ozgrated mozzarrella cheese

1 cgrated parmassen cheese
How To Make sausage spinach bread

1Cook spinach according to package directions. Drain well. Set aside. Brown sausage and drain off fat. Add Oinion and cook till onions are soft. Pre heat oven to 375 degrees.

2Beat eggs. Add the drained spinach.Mix in sausage onion mixture and parmassen cheese and mix in food processor.

3Cut 2 loafs of french bread in half length wise and spread with sausage mixture and top with mozzarella cheese. Bake 20 minutes or until browned. Cool slightly and cut into slices 1 1/2 to 2 inches wide.
