sausage spinach bread

This is from the Best of Louisianna cookbook. I made this as a appetizer for a Christmas dinner at my daughters. My grandkids who don't care for spinach loved this. I modified recipe and used pre made french bread loafs from store and spread the mixture on top and baked it. Really good.

Ingredients
- 2 - french bread loaves
- 2 packages 10 0z each frozen chopped spinach
- 2 Lbs - hot pork sausage
- 4 Tbs - chopped onion
- 2 - eggs
- 20 oz - grated mozzarrella cheese
- 1 cup grated parmassen cheese
How To Make sausage spinach bread

Step 1Cook spinach according to package directions. Drain well. Set aside. Brown sausage and drain off fat. Add Oinion and cook till onions are soft. Pre heat oven to 375 degrees.

Step 2Beat eggs. Add the drained spinach.Mix in sausage onion mixture and parmassen cheese and mix in food processor.

Step 3Cut 2 loafs of french bread in half length wise and spread with sausage mixture and top with mozzarella cheese. Bake 20 minutes or until browned. Cool slightly and cut into slices 1 1/2 to 2 inches wide.
