Ingredients

  • 8 ounces oyster mushrooms, stalks removed
  • 1 tablespoon Mirin
  • 3 tablespoons soy sauce
  • 3 tablespoons sake
  • 1 teaspoon sugar
  • 1 teaspoon olive oil
  • 1 - scallion chopped
  • 0 - juice of 1/2 lemon

How To Make roasted teriyaki oyster mushrooms

  • Step 1
    Mix the mirin, soy sauce, sake, sugar, and oil together. Marinate the mushrooms for 1 hour.
  • Step 2
    Heat oven to 425 degrees. Place the oyster mushrooms in a single layer and drizzle with olive oil and season with salt. Roast in the oven for about 10 minutes. Until browned but not burnt. Turning halfway through.
  • Step 3
    Cook the marinade in a saucepan and simmer for 4 minutes. Remove the mushrooms from the oven and let sit to cool down a bit.
  • Step 4
    Plate and drizzle the marinade reduction over top and garnish with the scallions and a pinch of lemon juice.
