Ingredients
- 8 ounces oyster mushrooms, stalks removed
- 1 tablespoon Mirin
- 3 tablespoons soy sauce
- 3 tablespoons sake
- 1 teaspoon sugar
- 1 teaspoon olive oil
- 1 - scallion chopped
- 0 - juice of 1/2 lemon
How To Make roasted teriyaki oyster mushrooms

Step 1Mix the mirin, soy sauce, sake, sugar, and oil together. Marinate the mushrooms for 1 hour.

Step 2Heat oven to 425 degrees. Place the oyster mushrooms in a single layer and drizzle with olive oil and season with salt. Roast in the oven for about 10 minutes. Until browned but not burnt. Turning halfway through.

Step 3Cook the marinade in a saucepan and simmer for 4 minutes. Remove the mushrooms from the oven and let sit to cool down a bit.

Step 4Plate and drizzle the marinade reduction over top and garnish with the scallions and a pinch of lemon juice.
