This is a delicious spread for freshly made, warm baguettes.

Ingredients

  • 2 heads of garlic, peeled
  • 1 cup plus 2 Tbsp olive oil
  • 1 1/2 cups shredded Parmesan
  • 2 tablespoons fresh parsley chopped
  • salt
  • crusty bread for serving

How To Make roasted garlic parmesan olive oil spread

  • Step 1
    Place the garlic cloves and 2 Tbsp of olive oil in a saucepan.
  • Step 2
    Cook over medium-low heat until the garlic is browned and nice and soft. Do not let it burn.
  • Step 3
    Puree in a food processor.
  • Step 4
    Then move to a bowl. Add the cheese and parsley.
  • Step 5
    Pour the remaining olive oil and season with salt. Serve with bread.
